This is the birthday cake that I made for my incredible granny’s 100th birthday this month. It combines her favourite flavours: brown butter banana sponge, vanilla cheesecake filling and almond butter buttercream.

Baking banana bread was an obvious choice during quarantine – and my banana walnut bread turned out to be a family favourite! During my time in Belfast I have learned that many like to refer to what I call muffins as ‘buns’ – I have therefore also included a picture of my Jamaican banana pecan muffins/ buns

The blueberry lavender scones used my home-grown lavender. Both pie and scones are vegan.

Thank you so much for a wonderful baking experience! Here are my results…for gluten free/ dairy free buns and a small batch of carrot cake cupcakes Coconut cream icing, mixed with desiccated coconut for the bunny fur texture (and red food coloring for pink bit) and a strategically sliced blueberry for eyes and whiskers.
